Cupcake au citron meringué / Lemon tart cupcake

Cupcake au citron meringué
Dimanche pour célébrer le 30ème anniversaire de mariage des parents de mon chéri, j'ai décidé de leur faire une délicieuse surprise et j'ai pensé que cette surprise devait à la fois être bonne et belle et quoi de mieux que des cupcakes pour cela...! Alors j'ai fait des cupcakes en tarte au citron avec sa meringue à l'italienne soit le mélange parfait entre un cupcake et une tarte au citron meringué.
Cette recette est en trois étapes soit un lemon curd, les cupcakes et la meringue à l'italienne.
Alors pour les cupcakes :
- 175g de sucre
- 175g de beurre mou
- 175g de farine
- 3 oeufs
- 2 citrons
- 1/2 sachet de levure
Pour le lemon curd : 
- 1 gros citron
- 70g de beurre coupé en morceaux
- 70g de sucre en poudre
- 2 oeufs battus
Pour la meringue italienne: 
- 2 blancs d'oeufs
- 30g de sucre + 150g de sucre
- 5cl d'eau
Il faut d'abord faire le lemon curd. Battre les oeufs et le sucre dans la casserole. Ajouter le jus et le zeste du citron puis le beurre en petits morceaux. Mettre sur feu très doux et ne jamais cesser de mélanger pendant une bonne dizaine de minutes. Lorsque la crème est suffisamment épaisse, arrêter la cuisson et réserver.
Pour les cupcakes: faire préchauffer le four à 150°C. Mélanger le beurre mou et le sucre puis ajouter les œufs un par un tout en mélangeant énergiquement en y incorporant le farine tamisée et la levure. Zester les deux citrons et le mettre dans la pâte en même temps que le jus d'un seul citron et bien mélanger. Verser cette  pâte dans des caissettes et les faire cuire pendant 15 minutes afin que les cupcakes soient juste dorés.
Lorsque les cupcakes sont cuit, les laisser refroidir puis "creuser" un petit trou peu profond au cœur du cupcake et garder ce "chapeau" que vous avez retiré près de vos cupcakes. Dans le petit trou creusé, incorporer le lemon curd puis remettre le "chapeau".
Pour la meringue: verser les 150g de sucre et l'eau dans un casserole et faire chauffer sur feu moyen en surveillant la cuisson avec un thermomètre de cuisson. Pendant ce temps, battre les blancs tout doucement avec un batteur et lorsqu'ils deviennent mousseux, y ajouter les 30g de sucre. Lorsque le sirop atteint les 110°C, augmenter la vitesse du batteur. Dès que le sirop est à 118°C, le verser en filet sur les blancs bien montés et battre en attendant que le mélange soit tiède. La meringue est prête. Mettre cette meringue dans une poche à douille et dresser sur les cupcakes. Brûler la meringue à l'aide d'un chalumeau pour faire dorer la meringue. 
Et voici un cupcake aussi beau que bon à la hauteur de l'évènement!

Sunday to celebrate the 30th wedding anniversary of my boyfriend's parents, I've decided to bake them a delicious surprise and I thought that this surprise should be both delicious and pretty and what better than a cupcake to do such a combination? So I did a lemon tart cupcake with an Italian meringue which is the perfect mix between a cupcake and a lemon meringue tart!
This is a three steps recipe which are the lemon curd, the cupcakes and the Italian meringue.
For the cupcakes :
- 1 cup of sugar
- 1 cup of flour
- 3/4 cup of butter
- 3 eggs
- 2 lemons
- 1 spoon of baking powder
For the lemon curd:
- 1 big lemon
- 1/4 cup of butter
- 1/4 cup of sugar
- 2 eggs
For the Italian meringue:
- 2 egg whites
- 1 big spoon of sugar + 4/5 cup of sugar
- 1/5 cup of water
First of all, the lemon curd. Whisk the eggs and the sugar in a saucepan. Add the juice and the zest than the butter in small pieces. Put the saucepan on a low heat and never stop whisking for about ten good minutes. When the curd is thick, stop the heat and put it on the side.
For the cupcakes: pre-heat the oven at 300°F. Whisk the soft butter with the sugar than add the eggs one by one and than the flour and baking powder. Add the zest of the two lemons and the juice of one lemon into the batter and whisk. Pour this batter into your cupcake pans and put them in the oven for 15 minutes until the cupackes are slightly golden.
When the cupcakes are cooked, let them cool off than "dig" a small hole into the heart of the cupcake but not to deep and keep aside this little piece next to your cupcake. In this little hole, incorporate the lemon curd and than put back the little piece of cupcake.
For the meringue: pour the 4/5 cup of sugar and the water in a sauce pan and cook it on a low heat and keep an eye on the sirup with a cooking thermometer. At the same time, whisk the egg whites slowly with an hand mixer and when it becomes frothy add the big spoon of sugar. When the sirup is up to 230°F, whisk vigorously the egg whites. And when the sirup is at 244°C take it away from the heat and pour slowly on the  stiffed egg whites and continue whisking until this batter is cooler. The meringue is ready. Put it into a pastry bag and decorate your cupcake with this meringue. Than "burn" the meringue with a cooking blowtorch until the meringue turns golden. 
And here are cupcakes pretty and tasty to celebrate such an event!

Je crois bien que celui-ci est mon cupcake préféré. La garniture est vraiment légère et on ne peut s'empêcher d'en manger un second.
