Cupcake Red velvet pour la saint Valentin / Red velvet cupcake for Valentine's day

Cupcake Red velvet
La saint Valentin est toujours une bonne occasion pour dire à votre chéri que vous l'aimez! Et quoi de mieux pour cette fête qu'un cupcake tout rouge et blanc qui fond dans la bouche?? Le cupcake red velvet est une véritable institution aux Etats-Unis et lorsque vous le gouterez vous comprendrez pourquoi, comme son nom l'indique si bien c'est comme du velours dans la bouche, c'est délicat et subtile! En bref, c'est à tester!

Ingrédients pour 12 cupcakes
Pour les cupcakes:
-430 g de farine
-1 cuillère à café de levure
-1 cuillère à café de sel
-2 cuillères à soupe de cacao amer
-1/2 cuillère à moka colorant alimentaire rouge en poudre
-120 g de beurre doux en pommade
-360 g de sucre
-2 oeufs à température ambiante
-1 cuillère à café d'extrait de vanille
-230 ml de babeurre
-1 cuillère à café de vinaigre blanc
-1 cuillère à café de bicarbonate
Pour le glaçage:
-250g de philadelphia cream cheese
-100g de beurre mou
-150g de sucre glace
-extrait de vanille
Préchauffe le four à 180°. Tamiser ensemble la farine, la levure et le sel. Mettre le beurre mou et le sucre dans le bol et mélanger jusqu'à obtenir un appareil mousseux. Ajouter les oeufs un à un tout en continuant de battre, puis ajouter l'extrait de vanille et le cacao et le colorant rouge. Fouetter bien pour obtenir un mélange homogène.
Ajouter un tiers de la farine, fouetter, puis ajouter la moitié du babeurre et fouetter ajoutez encore 1/3 de farine, le reste du babeurre et le reste de la farine en fouettant bien à chaque fois.
Dans un bol, mélanger le vinaigre et le bicarbonate qui vont alors mousser puis ajouter à l'appareil et battre pour bien incorporer.
Remplir les caissettes à cupcakes aux 3/4 et enfournez pour 22 minutes. A la sortie du four, placez les cupcakes sur une grille et laissez complètement refroidir.
Pour le glaçage, battre le beurre mou et le cream cheese au batteur jusqu'à ce que le mélange soit souple (pour l'assouplir d'avantage j'utilise du lait ou de la crème liquide à 3%) puis ajouter le sucre glace (j'ai mis un poids de principe mais en général je sucre plus au goût)! Mettre le glaçage dans une poche à douille puis sur les cupcakes et enfin vous pouvez décorer selon vos envies! Pour ma part, je ne colore pas le glaçage puisque le cupcake est déjà rouge par contre je fais un rappel avec du sucre coloré et des pastilles de chocolat rouges et blanches.

Valentine's day is always a good occasion to tell your loved one how much you love him (or her)! What can be better to celebrate than having a red and white cupcake that melts into your mouth?? The red velvet cupcake is a real institution and when you taste it for the first time you will understand why, his name is so appropriate because it's like velvet in your mouth, it's delicate and subtle! Well, just taste it!!
Ingredients for 12 cupcakes
For the cupcakes
-2 1/2 cups of flour
-1 1/2 cups of sugar
-1 teaspoon of baking powder
-1 teaspoon of baking soda
-1 teaspoon of salt
-2 teaspoons of cocoa powder
-1/2 cup of butter
-1 cup of buttermilk
-2 large eggs, room temperature
-2 tablespoons of red food coloring
-1 teaspoon of white distilled vinegar
-1 teaspoon of vanilla extract
For the Cream Cheese Frosting:
-1 big cup of cream cheese, softened
-1/2 cup of butter
-1 teaspoon vanilla extract
-1/2 cup of powdered sugar
Preheat the oven to 350 degrees F. Sift together the flour, baking powder and salt. Put the softened butter and the sugar in a bowl and whisk until it's fuzzy. Add the eggs one by one while whisking than add the vanilla, cocoa powder and the coloring. Whisk until smooth.
Add 1/3 of the flour, mix, than add half the buttermilk than mix than add 1/3 of flour, the rest of the buttermilk, mix than add the rest of the flour.
In a bowl, put the vinegar and the baking soda, it will start to foam and than add it to the batter and whisk to incorporate it. Put the batter into the cupcakes pans and in the oven for 22 minutes. When you take the cupcake out of the oven let them cool off on a grill.
For the frosting : In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth (when it's not smooth enough I add milk or low fat liquid cream). Add the sugar and beat until incorporated (you can put more or less considering your taste). Put the icing in a cooking bag and than on the cupcakes and than you can decorate as you wish! I don't color the frosting because the cupcake is already red but I decorate with colored sugar or red and white chocolate candy.
