Filet mignon de porc laqué et son riz au sésame
Il y a peu, j'ai acheté un filet mignon de porc mais sans la moindre idée de comment je pourrais le cuisiner... C'est en recherchant un peu sur internet que j'ai eu l'idée de le cuisiner comme un canard laqué avec une sauce aigre-douce caramélisant subtilement la viande... Voulant le servir avec du riz mais en étant tout de même originale, j'ai décidé de l'assaisonner également en m'inspirant cette fois-ci du Japon... En bref un repas aux nombreuses saveurs qui nous a fait voyager en Asie!
Ingrédients (pour 4 personnes):
-1 filet mignon de porc (environ 500g)
-3 cuillères à soupe de vinaigre de riz
-2 cuillères à soupe de sauce soja
-2 cuillères à soupe de sauce terryiaki
-2 cuillères à soupe de miel
-2 cuillères à soupe de sauce barbecue
-1,5 cuillères à soupe de vinaigre balsamique
-1 cuillère à soupe de sucre
-1 cuillère à soupe d'huile de sésame
-sésame
-4 épices
-sel, poivre
Dans un plat, mélangez la sauce soja, la sauce terryiaki, le miel, le vinaigre balsamique et l'huile de sésame. Ajoutez-y le sésame, le poivre et le sel. Placez le filet mignon dans cette marinade puis couvrez et réservez au frais pour environ 3 heures.
Faites cuire le riz dans un rice-cooker.
Préchauffez le four à 230°C. Mettez le filet mignon dans un autre plat au milieu du four pour 10 minutes. Après ces dix minutes, sortez la viande puis baissez le feu à 190°C. Ajoutez la sauce barbecue à la marinade. En attendant que le four baisse en température, badigeonnez la viande partout. Faites la cuire sur un côté pendant 10 minutes, en rapprochant la viande du grill puis sortez la viande retournez-la et badigeonnez-la et recommencez la même opération de cuisson. Surveillez bien la viande pour qu'elle ne brûle pas. Sortez la viande et tranchez-la très finement.
Dans un bol, mélangez le vinaigre de riz avec le sucre et une pincée de sel. Versez ce mélange dans le riz puis ajoutez le sésame.
Servez chaud en nappant la viande du restant de marinade.

Not so long ago, I bought pork tenderloin but without knowing how I could cook it... After looking online, I have decided to cook it like a Peking duck with a sweet and sour sauce caramelizing subtly the meat.... As a side dish I wanted to serve rice but I also wanted to be original so I have decided to season it too but this time taking inspiration in another country : Japan... In a nutshell, it was a dish with many delicious flavors that allowed us to travel in Asia!
Ingredients (for 4 persons):
-1 pork tenderloin (approx. 1 lb)
-3 tablespoons of rice vinegar
-2 tablespoons of soy sauce
-2 tablespoons of terryiaki sauce
-2 tablespoons of honey
-2 tablespoons of barbecue sauce
-1,5 tablespoons of balsamic vinegar
-1 tablespoon of sugar
-1 tablespoon of sesame oil
-sesame
-all-spice
-salt, pepper
In a dish, mix together the soy sauce, terryiaki sauce, honey, balsamic vinegar and sesame oil. Add the sesame, pepper and salt. Place the tenderloin in this marinade than cover and put aside in the fridge for at least 3 hours.
Cook the rice in a rice-cooker.
Preheat the oven at 450°F. Put the tenderloin in another dish in the middle of the oven for 10 minutes. After these 10 minutes, take the meat out of the oven and lower the oven at 375°F. Add the barbecue sauce to the marinade. While waiting for the oven to cool down, brush each sides of meat with the marinade. Cook for 10 minutes on one side close to the grill than take the meat out of the oven and brush again with more marinade and cook for 10 more minutes on the other side, close to the grill. Be careful so it won't burn. Take the meat out and cut thin slices.
In a bowl, mix together the sugar, rice vinegar and a pinch of salt. Pour on the rice than add sesame.
Serve hot and top the meat with the rest of the marinade.
