Bavarois au citron / Lemon Bavarian cream

Bavarois au citron
Le bavarois est un dessert qui est toujours agréable à la fin d'un bon repas car il est léger et frais. Ce bavarois au citron est parfait pour finir par une pointe d'acidité un beau repas d'été. Au fort goût de citron, c'est une merveille pour tous les amateurs grâce à une mousse goûteuse parfaitement associé avec une génoise légère comme une plume...
Ingrédient (pour 6 personnes) :
-40cl de crème fleurette
-270g de sucre
-160ml de jus de citron
-1 citron
-5 œufs
-50g de beurre
-40g de poudre d’amande
-30g de fécule de maïs
-20g de farine
-5 feuilles de gélatine
-colorant jaune
Préchauffez le four à 180°C.
Battez 2 œufs avec 80g de sucre jusqu’à ce que le mélange blanchisse puis ajoutez progressivement la farine, 20g de fécule de maïs, 30g de beurre fondu et la poudre d’amande. Placez les cercles à pâtisserie préalablement beurrés sur une plaque bien plane, versez l’appareil puis enfournez pour 20 minutes. A la sortie du four, laissez refroidir.
Pendant ce temps, préparez la mousse au citron en faisant chauffer le jus de citron dans une casserole. Placez 4 feuilles de gélatine dans un bol d’eau froide pour les ramollir. Dans un bol, battez 3 jaunes d’œufs et 150g de sucre jusqu’à ce que le mélange blanchisse puis ajoutez le reste de fécule de maïs et versez le tout sur le jus de citron chaud. Remuez sur feu doux jusqu’à ce que la crème commence à épaissir puis ajoutez le reste de beurre. Ajoutez-y la gélatine essorée. Montez les blancs en neige puis incorporez-les délicatement à la crème. Montez la crème fleurette en chantilly et incorporez-la délicatement également à la préparation. Versez cette préparation dans les cercles par-dessus le biscuit puis placez au réfrigérateur.
Faites ramollir 1 feuille de gélatine dans un bol d’eau froide. Placez le jus d’un citron dans un casserole avec 40g de sucre et faites chauffer. Ajoutez-y la gélatine essorée puis maintenez la cuisson pour 2 minutes puis ajoutez enfin le colorant jaune. Placez sur la mousse de citron puis laissez le bavarois prendre pour au moins 2 heures au réfrigérateur. Dégustez bien frais

Ingredients (for 6 persons) :
-2 cups of liquid cream
-1, 1/3 cups of sugar
-3/4 cup of lemon juice
-1 lemon
-5 eggs
-1/4 cup of butter
-1/3 cup of almond powder
-1/4 cup of corn starch
-2 tablespoons of flour
-5 gelatin leafs
-yellow colorant
Preheat the oven at 350°F.
Beat 2 eggs with 1/3 cup of sugar until it starts to look white then add progressively the flour, 2 tablespoons of corn starch, half of the butter (melted) and the almond powder. Butter 6 baking circles and put them on a baking sheet pour the batter and bake for 20 minutes. Once it’s out of the oven, let it cool.
Meanwhile, prepare the lemon mousse by heating the lemon juice in a saucepan. Put 4 gelatin leafs in a bowl of cold water to soften them. In a bowl, beat 3 egg yolks with ¾ cup of sugar until it starts to look white than add the rest of the corn starch and pour the batter on the hot lemon juice. Stir on a low heat until the cream starts to thicken than add the rest of the butter and the wringed gelatin. Beat the egg whites until firm and incorporate them to the lemon cream. Beat the liquid cream until firm and incorporate it too into the batter. Pour the lemon batter in the baking circles above the cake and put in the fridge.
Soften 1 gelatin leaf in a bowl of cold water. Put the juice of 1 lemon in a saucepan with the rest of the sugar and heat. Add the wringed gelatin and cook for 2 more minutes than add the yellow colorant. Place on the lemon mousse then let the Bavarian cream in the fridge for at least 2 hours in the fridge. Eat cold.
