Caramel is really one of my biggest weakness in terms of sweets, it’s simple whenever I go to a restaurant or a bakery and I see a delicacy with a delicious caramel taste (salted butter is even better) I simply can’t resist… However, until now, I never baked caramel cupcakes and I think it’s only because I couldn’t resist eating them all and so close to the wedding that would be bad!! That’s why I have decided to bake some for the private sale because with so many witnesses I knew I wouldn’t be able to eat too much (hihihi)… Well these sweet treats were a big success… for all the caramel lovers!!
Ingredients (for 25 mini-cupcakes or 12 cupcakes)
For the cupcakes:
-1 cup of flour
-1/2 cup of softened butter
-1/2 cup of sugar
-2 eggs
-1/4 cup of milk
-1 tablespoon of salted butter caramel
-5 to 6 (hard) caramel candies
-1 teaspoon of baking powder
-salt
For the icing:
-2, 3/4 cups of icing sugar
-8 oz of cream cheese at room temperature
-4 oz. of salted butter caramel
-1/4 cup of softened butter
-1 teaspoon of vanilla extract
Preheat the oven at 350°F.
Mix the butter and the sugar with a whip until you obtain a creamy batter then add the eggs one by one and the rest of the dry ingredients (flour, baking powder, and salt) and mix. Crush the caramel candies to obtain splinters, add them to the batter with the milk and the caramel.
Pour the batter in your (mini) cupcakes moulds and bake for 12 minutes for mini cupcakes and 20 minutes for bigger ones. Once there are baked remove them from their mould straight away and put them on a grill to cool.
Meanwhile, prepare the icing by beating the cream cheese with the butter until you obtain a velvet and creamy batter. Add the caramel sauce and the vanilla and mix until complete incorporation. Add the icing sugar and mix. Increase the speed of the beater for at least 2 minutes. Put the icing in a pastry bag and put it on your cupcake, you can add a decoration such as golden peals or splinters of caramel candy.
