Trianon festivités hivernales / Trianon

Trianon
Parfois, on se fait une fausse idée quant à la difficulté de certains grands classiques et effectivement, j'étais persuadée que le Trianon (ou Royal) était un gâteau bien compliqué à réaliser. Pourtant, même s'il y a trois étapes distinctes, il est finalement assez facile à faire et tant mieux car c'est un vrai régal que je vais pouvoir faire et refaire! Intense en chocolat et croquant avec le praliné feuilleté, nous nous sommes régalés et j'ai surtout bien profité de tout le monde puisque ce gâteau est à préparer la veille!
Mon astuce: pour obtenir cette décoration, j'ai doré le gâteau et les flocons de neige avec de la poudre doré comestible sur un pinceau.

Ingrédients (pour 8 personnes):
-40cl de crème entière liquide
-200g de chocolat noir
-200g de pralinoise
-80g de crêpes dentelles
-80g de poudre d'amande
-80g de sucre glace
-70g de sucre
-20g de farine
-3 blancs d'oeufs
-3 feuilles de gélatine
Préchauffez le four à 180°C. 
Préparez la dacquoise en battant les œufs en neige puis lorsqu'ils deviennent fermes, ajoutez le sucre et continuez à battre. Mélangez la poudre d'amande, la farine et le sucre glace ensemble puis incorporez ce mélange délicatement en plusieurs fois, avec une maryse. 
Versez cette préparation dans un moule à charnière avec un papier sulfurisé au fond. Enfournez pour 20 minutes. 
Pendant ce temps, faites fondre la pralinoise et ajoutez-y les crêpes dentelles préalablement émiettées. Etalez uniformément sur la dacquoise. Réservez.
Placez la gélatine dans un bol d'eau froide. Préparez une ganache au chocolat en faisant fondre au bain-marie avec 15cl de crème liquide. Mélangez bien puis incorporez la gélatine préalablement essorée et mélangez à nouveau. Battez le reste de crème liquide en chantilly bien aérée. Incorporez délicatement cette chantilly à la ganache. Versez la mousse sur la pralinoise. Placez au réfrigérateur pour au moins 6 heures. 
Démoulez délicatement et lissez les défauts. Sortez au moins 30 minutes avant dégustation.

Sometimes, you have a false idea of how hard a classic pastry can be, indeed I was sure that the Trianon (or Roal) was a really complicated cake to bake. But I was completely wrong because, even though it has three different steps, it is quite easy to bake and that's a good thing because it was a real treat that I will bake again and again! The intense chocolate and the praline crunch were a real delight, and it was nice to be able to be with my family and not it the kitchen because this cake can be prepared this cake the day before!
My advice: to obtain this decoration, I used gold culinary powder with a paint brush.

Ingredients (for 8 persons):
-2 cups of liquid cream
-7 oz. of dark chocolate
-7 oz. of praline chocolate
-3 oz. of crispy Brittany crepes
-3/4 cup of almond powder
-3/4 cup of icing sugar
-1/3 cup of sugar
-1/4 cup of flour
-3 egg whites
-3 gelatin leaves
Preheat the oven at 350°F.
Prepare the cake by beating the egg whites until stiff, once they start to whiten, add the sugar. Mix together the almond powder, the icing sugar and the flour and incorporate this blend delicately and progressively to the egg whites. Pour this batter into a springform pan with a baking sheet at the bottom. Bake for 20 minutes.
Meanwhile, melt the praline chocolate and add the minced crispy Brittany crepes. Spread on the cake. Put aside.
Put the gelatin into a bowl of cold water. Prepare ganache by melting the chocolate in a bain-marie, with 1 cup of liquid cream. Mix well and incorporate the drained gelatin and stir again. Beat the rest of the liquid cream into a firm Chantilly. Incorporate delicately this Chantilly to the ganache. Pour on the praline chocolate. Put in the fridge for at least 6 hours.
Take out of the fridge at least 30 minutes before you serve.
