Apple cobbler moelleux et carmélisé à souhait
Le cobbler est un gâteau qui est assez peu connu en France et est souvent, et à tort, confondu avec le crumble. En effet, même si ces deux desserts se ressemblent, le cobbler se différencie par son moelleux avec un gâteau tendre et aérien! Le cobbler le plus connu est celui à la pêche mais pour changer un peu (et parce que je préfère) j'ai choisi de la faire aux pommes.... Les pommes sont caramélisées à souhait, tendre et fondante... un vrai bonheur!!
Mon astuce: vous pouvez servir votre cobbler avec un peu de crème fouettée légèrement vanillée ou encore de la glace!

Ingrédients (pour 6 à 8 personnes):
-270g de farine
-240g de crème fleurette + 2 cuillères à soupe
-150g de beurre mou
-100g de sucre+ 1 cuillère à soupe
-100g de cassonade
-6 pommes légèrement acidulées
-1 cuillère à soupe de jus de citron
-1 sachet de levure chimique
-1 gousse de vanille
-sucre glace
-1 cuillère à café de sel
Préchauffez le four à 190°C.
Faites fondre 50g de beurre dans une casserole jusqu'à ce qu'il commence à dorer légèrement.
Pendant ce temps, épluchez les pommes et coupez les en quartiers. Placez-les dans un saladier et arrosez-les de jus de citron. Dans un autre bol, mélangez 30g de farine, 1/2 cuillère à café de sel, 65g de sucre, les graines de la gousse de vanille et la cassonade jusqu'à l'obtention d'une poudre fine et homogène. Versez le beurre liquide sur les pommes puis le mélange précédent et mélangez bien pour enrober chaque quartier de pomme. Placez les pommes dans le plat, couvrez avec de l'aluminium puis enfournez pour 10 minutes.
Pendant ce temps, mélangez le reste de la farine, la levure, le reste de sel et le reste de sucre. Coupez le reste de beurre en petits dés (il doit être bien mou) et incorporez-le au mélange. Mélangez bien à la main comme pour un crumble puis ajoutez les 240g de crème fleurette et mélangez à nouveau jusqu'à l'obtention d'une pâte homogène. Répartissez cette pâte à l'aide d'une cuillère à soupe (pas besoin de l'étaler) sur les pommes. Étalez au pinceau le reste de la crème sur cette pâte puis saupoudrez de sucre glace.
Enfournez à nouveau pour 45 minutes jusqu'à ce que la pâte soit dorée et que les pommes soient tendres et juteuses. N'hésitez pas à couvrir si le cobbler colore trop vite. Laissez refroidir une vingtaine de minutes avant de servir.

The cobbler is not well known in France, and it's usually confused with the crumble. Indeed, both cakes look alike but there are quite different, the cobbler is much more tender and soft! The peach cobbler must be the most famous cobbler, but I have decided to change a bit and made an apple cobbler.... The apples are well caramelized and tender, a real treat!!
My advice: you can eat it with whipped cream or vanilla ice-cream!
Ingredients (for 6 to 8 persons):
-2, 1/4 cups of flour
-1 cup of liquid cream + 2 tablespoons
-2/3 cup of softened butter
-1/2 cup of sugar + 1 tablespoon
-1/2 cup of brown sugar
-6 lightly acid apples
-1 tablespoon of lemon juice
-2 tablespoons of baking powder
-1 vanilla pod
-icing sugar
-1 teaspoon of salt
Preheat the oven at 380°F.
Melt 1/4 cup of butter in a saucepan until it starts to color.
Meanwhile, peel the apples and cut them into quarters. Put them in a salad bowl, sprinkle with lemon juice. In another bowl, stir 1/4 cup of flour, 1/2 teaspoon of salt, 1/3 cup of sugar, the grains of the vanilla pod and the brown sugar until you obtain a homogeneous powder. Pour the liquid butter on the apples and the previous batter and stir to coat each piece of apple. Put in a dish, cover with tin foil and cook for about 10 minutes.
Meanwhile, mix the rest of the flour, the baking powder, the rest of the salt and the rest of the sugar. Cut the rest of the butter in small dices and incorporate it to the previous batter. Stir well with your hands, like for a crumble, and add the cup of liquid cream and stir again until you obtain a smooth batter. Share this dough with a big spoon (no need to spread the dough) on the apples. Brush the rest of the liquid cream and powder with icing sugar.
Cook for about 45 minutes until the dough is golden and the apples tender and juicy. Don't hesitate to cover the cobbler if it colors too quickly. Let it cool for about 20 minutes before you serve.
