Tarte gourmande rhubarbe-framboise / Yummy rhubarb and rapsberry pie

Tarte gourmande rhubarbe-framboise - Dans la cuisine d'Hilary
A force de faire des recettes à la rhubarbe, vous allez finir par croire que j'ai une petite obsession... Et ce n'est pas complètement faux... Mais tout à fait honnêtement, cette nouvelle recette a été réalisée aussi et surtout parce qu'il me restait des tiges de rhubarbe suite à notre cueillette... 
Mon mari étant fan de la tarte à la rhubarbe, je suis partie sur cette idée que j'ai un peu adaptée afin d'y ajouter des framboises. Cette alliance de fruits qui peuvent être à la fois acide et sucré était parfaitement contrebalancé par l'appareil de la tarte qui était à la fois doux et sucré, cassant ainsi le trop-plein d'acidité qui aurait pu poser problème. Au final, j'ai obtenu une tarte gourmande et savoureuse qui n'a pas fait long feu, tant elle a été appréciée!
Mon astuce: vous pouvez accompagner cette tarte de glace à la vanille, mais là c'est vraiment pour les plus gourmands!

Ingrédients (pour 6 personnes):
-1 pâte sablée
-700g de rhubarbe
-25cl de crème liquide épaisse
-125g de framboises
-125g de sucre + 4 cuillères à soupe
-2 œufs
-1 cuillère à café d'extrait de vanille liquide
Lavez, épluchez et coupez la rhubarbe en tronçons puis placez dans une passoire. Versez les 4 cuillères à soupe de sucre par-dessus et laissez dégorger pendant au moins 1 heure.
Préchauffez le four à 180°C.
Placez la pâte sablée dans un moule à tarte, piquez avec une fourchette puis enfournez pour environ 10 minutes.
Dans un saladier, fouettez les œufs et le reste de sucre, ajoutez-y la crème liquide puis l'extrait de vanille liquide. Mélangez jusqu'à l'obtention d'une crème homogène.
Sur le fond de tarte précuit, répartissez les tronçons de rhubarbe égouttés puis les framboises. Versez l'appareil par-dessus puis enfournez pour 45 minutes.
Dégustez tiède ou à température ambiante.

With all the rhubarb recipes I'm putting on my blog, you are going to think I am obsessed... Well it's not completely wrong.... But to be honest, this new recipe was made mostly because I still had some rhubarb left from our last fruit picking...
Since my husband is a huge fan of rhubarb pie, I adapted this idea and added some raspberries. This blend of 2 acid fruits could surprise you, but thanks to the pie batter that is soft and sweet, it's the perfect balance for a perfect dessert!
My advice: you can serve this pie with a little bit of vanilla ice-cream, if you are a little greedy.... 
 
Ingredients (for 6 persons):
-1 shortcrust pastry
-25 oz. of rhubarb
-1 cup of liquid cream
-4,5 oz. of raspberries
-2/3 cup of sugar + 4 tbs.
-2 eggs
-1 tsp. of vanilla extract
Wash, peel and cut the rhubarb into segments and put them in a colander. Pour 4 tbs. of sugar on top and let it disgorge for 1 hour.
Preheat the oven at 350°F.
Put the shortcrust pastry in the pie mould, prick with a fork and cook for 10 minutes.
In a mixing bowl, whisk the eggs with the rest of the sugar, add the liquid cream and the vanilla extract. You must obtain an homogeneous batter.
Share the drained rhubarb segments and the raspberries on the pie crust. Pour the batter on top and cook for 45 minutes.
Serve warm or at room temperature.
